Though I grew-up in Japan, between the ages of 5~14, and ate Japanese school lunches K~4th grade, at home, we ate Iranian food my Mother cooked. This will make a nutritious and delicious stock for your soup and you can freeze the remaining for other soups or dishes. I've been sipping some for breakfast for weeks. Most miso soups in restaurants contain gluten, either because of the brand of miso used or the soy sauce added. Little did I know, it's easy to make and tastes SO much better homemade. Miso paste is mixed into dashi, along with other ingredients such as tofu, seaweed (usually wakame) or mushrooms. Miso soup, and the Salad With Everything. I have 2 current passions, call them obsessions, in The Kitchen. It's my Asian style version of chicken soup with its light, yellow, salty broth. I'm definitely not ready for peaches and watermelon and scorching temperatures and sweating. My favorite thing about Spring is that there's no sweating involved. Miso soup is an integral part of most Japanese meal. Whenever I go to a Japanese restaurant, I have to start my meal with a bowl of miso soup. Miso soup made from scratch will always be the best, but when I'm traveling, I have no shame about sipping the instant stuff. It's not only cheap and easy to make but very healthy for you. I had missed this light yet hearty soup. Miso soup is one of the most popular entrees so to speak in Japan. During the winter, chickpea miso soup is my comfort food.
